Angel Hair Pasta with Tomatoes & Pine Nuts

  • Salt and pepper
  • 2 medium tomatoes, diced
  • 1 garlic clove, minced
  • 2 tbsp. olive oil
  • 8 oz. angel hait pasta
  • 2 tbsp. pine nuts, toasted
  1. Bring a large pot of salted water to a boil.
  2. Meanwhile, combine tomatoes, garlic, and oil in a medium bowl; salt and pepper.
  3. Let tomato mixture stand at least 10 minutes.
  4. Cook pasta in boiling water until al dente; drain and return to pot.
  5. Add tomato mixture; toss to combine.
  6. Serve sprinkled with pine nuts.
  7. Makes 4 servings.
