Bean Sprout Salad

  • 1 bag bean sprouts
  • Rice vinegar
  • Soy sauce
  • Sesame oil
  • Pinch of sugar

  1. In a large pot, bring water to a boil.
  2. Blanch bean sprouts for about 30 seconds; drain.
  3. In a large bowl, toss bean sprouts with rice vinegar, soysauce, and sesame oil.
  4. Sprinkle a pinch of sugar.
  5. Refrigerate for about 30 minutes before serving.
  6. Makes 6 servings.

A no-brainer recipe from my mother. You can buy bean sprouts from Asian vendors at the River market Farmers’ Market or at Sam’s Oriental Store. You can also buy rice vinegar and sesame oil at Sam’s. Do not omit sugar. It helps to tone down the tartness of vinegar. A great accompaniment to any Asian dish.
