Chunky Vegetable Salad

  • 2 tbsp. olive oil
  • 2 tbsp. rd wine vinegar
  • 3/4 tsp. salt
  • 1/8 tsp. sugar
  • 1/4 tsp. pepper
  • 2 large tomatoes, cut into thin wedges
  • 1 large yellow pepper, cut into bite-size chunks
  • 1 medium cucmber, unpeeled, cut into bite-size chunks
  • 1/2 small red onion finely chopped
  • 1 tbsp. chopped fresh parsley
  1. In a medium bowl, mix first 5 ingredients until blended.
  2. Add remaining ingredients; toss to coat.
  3. Makes 4 servings.
