Collards

  • 1 tbsp. olive oil
  • 1 cup chopped onions
  • 6 cups chopped collards
  • 1/2 cup vegetable broth
  1. In a large skillet, heat oil over high heat.
  2. Add onions; cook, stirring, until transparent., about 2 minutes.
  3. Add collards; cook, stirring, until wilted, about 2 minutes.
  4. Add broth; simmer, covered, 15 minutes.
  5. Makes 4 servings.
