Green Beans with Bacon & Pine Nuts

  • 2 lbs. green beans, ends trimmed
  • 4 oz. sliced bacon, cut into 1/2 –inch strips
  • ½ tbsp. olive oil
  • ½ tsp. salt
  • ¼ cup pine nuts, toasted
  1. In 5-quart saucepot in 1 inch boiling water, heat beans to boiling over high heat.
  2. Reduce heat to low.
  3.  Simmer, uncovered, for 5-10 minutes, until beans are tender-crisp; drain.
  4. Wipe saucepot dry.
  5. In same saucepot, cook bacon, stirring frequently, over medium heat until golden.
  6. With slotted spoon, transfer bacon to paper towels to drain; set aside.
  7. To drippings in saucepot, add olive oil; heat over medium-high heat until hot.
  8. Add green beans with salt and cook, stirring frequently, until beans are lightly brown and tender.
  9. Spoon green beans onto warm large platter; sprinkle with bacon and toasted pine nuts.
  10. Makes 8 servings.
