Hummus

  • 1 (15oz.) can chickpeas, rinsed & drained
  • 2 tbsp. Tahini
  • 2 tbsp. olive oil
  • ¼ cup fresh lime juice
  • 2 garlic cloves, minced
  • ½ tsp. salt
  • ¼ tsp. ground cumin
  • 1/8 tsp. ground red pepper
  • 3 tbsp. water
  • Chopped fresh parsley

  1. Process first 9 ingredients in a food processor until blended.
  2. Gradually add 3 tbsp. +/- water until desired consistency.
  3. Cover and chill for one hour.
  4. Sprinkle with chopped fresh parsley before serving.
