Mashed Jerusalem Artichokes

  • 3 cups diced and peeled Jerusalem artichokes
  • 1/2 cup heavy cream
  • 2 tbsp. unsalted butter
  • 1/2 tsp. salt
  • 1/4 tsp. ground pepper
  1. Place Jerusalem artichokes in a 2-quart saucepan and cover with water.
  2. Set over high heat and bring to a boil.
  3. Once the water comes to a boil, simmer for 15 minutes or until easily pierced with a knife.
  4. Remove from heat, drain, and place the artichokes in a food processor with heavy cream, butter, salt, and pepper.
  5. Process for 10-15 seconds or until smooth.
  6. Remove from food processor; serve immediately.
  7. Makes 4 servings.

    Willow Springs Market Garden and Cedar Rock Acres sell them at Certified Arkansas Farmers Market. They tend to be available at the end of summer to early fall.
