Mesire Wat (Ethiopian Red Lentils)

  • 2 tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 piece fresh ginger, sliced
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 cup red lentils
  • 2-3 cups water
  • 2 tbs. berebere mix
  • Salt to taste
  1. In a skillet heated with olive oil, cook garlic and ginger until fragrant.
  2. Add onion and cook until transparent.
  3. Add tomatoes, lentils, berebere mix, and salt.
  4. Simmer 30-40 minutes, until lentils are soft.
  5. Makes 8 servings.
