Pork with Tomatoes & Garbanzo Beans

  • 1/2 can (8oz) garbanzo beans, drained
  • 1/4 cup onion, finely chopped
  • 1/4 cup carrot, finely chopped
  • 1 boneless pork chop, cubed
  • 1 can whole tomatoes
  • 1 cube vegetable bouillon
  • 1 tbsp. olive oil
  • 1 bay leaf
  • Salt & pepper
  1. In a pot heated with olive oil, lightly sauté onion, carrot, and pork, about 5 minutes; salt and pepper.
  2. Add whole tomatoes and vegetable bouillon.
  3. Simmer until meat becomes tender, about 15 minutes.
  4. Add garbanzo beans and a bay leaf, then cook for 5 minutes.
  5. Serve immediately.
  6. Makes 2 servings.
