Sesame Green Beans

  • 2 lbs. green beans, ends trimmed
  • 1 tbsp. sesame seeds
  • 2 tbsp. soy sauce
  • 2 tsp. Asian sesame oil
  • 1 tbsp. minced, peeled fresh ginger or 3/4 tsp. ground ginger
  1. In a 5-quart saucepot, in 1 inch boiling water, heat beans to boiling water, over high heat. 
  2. Reduce heat to low; simmer, uncovered, 5-10 minutes, until beans are tender-crisp.
  3. Meanwhile, in small saucepan, toast sesame seeds over medium heat, stirring and shaking pan frequently, until golden brown.
  4. Drain beans; wipe saucepot dry.
  5. Return beans to saucepot.
  6. Stir in soy sauce, sesame oil, and ginger; heat through.
  7. Sprinkle beans with toasted sesame seed; serve warm or cover and refrigerate to serve cold later.
  8. Makes 8 servings.
