Wild Persimmon Bread

  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 tsp. salt
  • 1/2 cup vegetable oil
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cloves 
  • 1 1/2 cups wild persimmon pulp
  • 1 cup chopped pecans
  • 1 1/2 tsp. baking soda
  • 1/2 cup raisins
  1. Preheat oven to 325 degrees F.
  2.  Oil a 9 x 4 inch pan.
  3. In a small bowl, combine flours, cinnamon, nutmeg, cloves, and salt, nuts.
  4. In a large bowl, blend eggs, sugar, and oil.
  5. Mix baking soda into pulp, and add to sugar mixture.
  6. Fold in flour mixture.
  7. Fold pecans and raisin into batter.
  8. Pour batter into prepared pan.
  9. Bake for 50 minutes, or until tester inserted in the center comes out clean.
  10. Makes 6 servings.
