Arugula & Radish Salad

  • 1 tsp. Dijon mustard
  • 2 tbsp. lemon juice
  • Salt & pepper
  • 4-5 bunches arugula, washed well and dried
  • 1 bunch radishes, sliced
  1. In a large bowl, whisk together mustard and lemon juice.
  2. Season with salt and pepper.
  3. Whisk in oil.
  4. Add arugula and radishes to bowl, and toss to coat.
  5. Serve immediately.
  6. Makes 8 servings.
