Shrimp Salad with Fresh Corn & Black Beans

  • 2 cups shrimp, steamed and chilled
  • 1 (14.5 ounce) can black beans, drained and rinsed
  • 1 1/2 cups fresh corn cut off the cob
  • 1 1/2 cups tomatoes, chopped
  • 1 tbsp. fresh jalapeno, seeded and chopped
  • 1/4 cup cilantro, chopped
  • Juice of one lime
  • 2 tsp. chile powder (to taste)
  • 1 clove garlic, minced
  • 1 tsp. sea salt

  1. Mix all the ingredients together.
  2. Adjust seasoning to taste.
  3. Chill for 15 minutes before serving.
  4. Makes 4 servings.
