- 2 cups shrimp, steamed and chilled
- 1 (14.5 ounce) can black beans, drained and rinsed
- 1 1/2 cups fresh corn cut off the cob
- 1 1/2 cups tomatoes, chopped
- 1 tbsp. fresh jalapeno, seeded and chopped
- 1/4 cup cilantro, chopped
- Juice of one lime
- 2 tsp. chile powder (to taste)
- 1 clove garlic, minced
- 1 tsp. sea salt
- Mix all the ingredients together.
- Adjust seasoning to taste.
- Chill for 15 minutes before serving.
- Makes 4 servings.
